For many years, I’ve done food essays on various aspects of dining: music and lighting in restaurants, picnics, language barriers (I really did, one time, order what I had thought was ‘des boissons’ [something to drink], and was brought two croissants!), and so on. I still write occasional tributes to Steve Pilling, which can be found on the website of his latest restaurant, Damson, in Heaton Moor, a suburb of Manchester. Steve is a chef himself, so he knows everything from the inside out, and his chef partner Simon makes simply lyrical dishes . . . you have only to look at the restaurant website for the current menu, and my own enthusiastic descriptions:
